
If the lines outside the first Mixt Greens (475 120 Sansome) were any indication, those strolling through the FiDi in early June might think that they’re giving the green stuff away as the new Mixt Greens location (120 475 Sansome) opens. We’re all about those fresh, organic, sustainably grown veggies and free range meats but will anyone notice the actual physical restaurant?
Both Mixt eateries would probably garnered LEED certifications as they designed the spaces using among other things no VOC paints, formaldehyde-free plywood and sustainably harvested Forest Stewardship Council (FSC) certified flooring. You didn’t want formaldehyde with your Bachelor salad did you?
They also went Green by using kirei board; a renewable material made from sorghum reeds and recycled plastic panels for décor.
Normally to go packaging represents an environmental disaster but here the materials such as the salad containers, cups and straws, are made from a corn biopolymer; a 100 percent compostable material.
Now that’s a healthy lunch.
